Since the past tourism changed a lot of aspects of territory and, for this reason, the same tourism contributed
to make know traditional aspects that otherwise would disappeared for a long time.
It's the typical situation of some characteristics foods and traditional sweets that will be prepared in order to
satisfy the tourists request. During last time in fact a lot of farm holidays were built with some other restaurants
and pizzerias on the green countryside in order to offer the best typical specialities of Gallura di Oviddè;
the most requested courses are suppa gaddhuresa, li pulugioni, li fioritti, li chjusoni,
li taddarini.
Suppa gaddhuresa is a flan of slices Sardinian dry bread with fresh cheese and herbs with bovine
and goat stock (today is used sheep stock) that must be cooked in baking-pan in the oven. It could be considered a
"poor course" but very good.
Typical sweets of the area are very good: niuleddi, cucciuleddi milati,
origlietti, frisgioli (fried fritters with lentisk oil and covered with honey),
rujoli (little fried fresh cheese balls with honey).
It is also possible to eat the famous "cocco", a traditional flat bread baked under hot ash of
fireplace and the most famous small pork known as "maialetto".
